Description
Kodo millet is grown organically, avoiding chemical fertilizers or pesticides, which helps preserve its subtle flavour and nutritional content. It is rich in dietary fibre, which aids digestion and provides a feeling of fullness, making it beneficial for weight management. Minerals like iron, calcium, magnesium, and B‑vitamins are well represented. It has antioxidant properties and may help in lowering cholesterol and supporting heart health. Cooking time is moderate; it absorbs flavours well, making it a good option in mixed dishes. Its low glycemic index makes it more suitable for those monitoring blood sugar.
Directions for Use: Soak ½ cup for 4 hours; cook 20 mins for hearty khichdi, crispy dosas, or nourishing kheer.
The nutritive value of Kodo millet can be enhanced when supplemented with lentils or pulses. Kodo goes well with dals or a good gravy of any of the pulses.
