Description
Ambemohar rice (which means “mango blossom” in Marathi) is an heirloom, aromatic rice variety grown traditionally in Maharashtra’s Western Ghats, cultivated without chemicals or synthetic fertilizers. Its short, plump grains cook to a soft, slightly sticky texture which pairs beautifully with traditional dishes like varan‑bhaat, kheer, masale bhat or khichdi. Despite being rich in carbohydrates, it is low in fat and relatively gentle on digestion, making it suitable even for children, the elderly, or people recovering from illness. The natural floral aroma comes through strongly when cooked, filling kitchens with its distinctive scent. Because it is less processed, there is more retention of naturally occurring proteins, fibre, and trace minerals compared to heavily polished rice. Also, its moderate glycemic load helps in stabilising blood sugar when part of balanced meals.
